Almond cookies, the way mum likes them. 🙂 Well okay, its not just mum who likes them. Even the little sister who refuses to eat any of my bakes found herself asking me to make more of them when there’s none left. (She’s generally a very picky eater, so I was pretty surprised when she actually took one to try the very first time I made these late last year). She’s even got me to make some for her boyfriend’s family. I’m pretty sure you’ll like them too. 🙂
So anyways, back to the making of the almond cookies. Of course, almonds would be the most important ingredient in here, like duh. Lol. I roasted them prior to mixing them into the batter. It gives them that crunchier bite and a stronger nutty aroma. I love how roasted almonds smell, and I think the golden brown hue from these nuts are pretty.
Mixing them in, mix mix mix. Cutting them up and baking them.
Oh hello you sweet little things. Haha. Sweet crumbly almond cookies. You won’t stop at just 1. Trust me. 🙂 A tray of about 40 bite size pieces for $16. definitely worth the price.
